Recipe: Sweet Potato Noodle Stir-Fry
Servings: 6
• 1 medium onion, finely diced
• 1 sweet pepper, diced
• 4 cloves garlic, minced
• 2 cups broccoli florets
• 1-2 tbsp olive oil
• 2 medium sweet potatoes,
spiralized
• 11/2 tbsp low-sodium soy sauce
• Ground black pepper to taste
• 1 lb chicken breast (optional)
1. Using a spiralizer, mandolin slicer, or knife, cut sweet
potatoes into noodles.
2. Heat olive oil in a large skillet over medium-high heat.
3. Once oil is hot, add onion, pepper, garlic and broccoli -
cook until tender (about 8-10 minutes).
4. Stir in sweet potato noodles and low-sodium soy sauce.
Stir occasionally until noodles are softened, an additional
8-10 minutes. Season with pepper to taste.
