Recipe: No Pasta Cauliflower Mac N Cheese
Servings: 4 • Serving size: Approx. 1/2 cup
• 1 head cauliflower (Tip: 1 lb
= 1½ cups raw, medium head
of cauliflower is approx.
2 lbs = 3-4 cups raw)
• 4 tbsp cream cheese
• 1 tbsp mustard (any kind)
• 1½ cup cheese
(1/2 cup reserved for top)
• Splash of cream
• Garlic powder
• Pepper to taste
1. Chop the heads off the cauliflower and steam until soft.
Once soft, drain and return to saucepan. Add cream
cheese, cheese, and cream - stir until incorporated.
2. Add mustard, garlic powder, salt and pepper to taste.
3. Add mixture to a baking dish, cover with remaining ½ cup
cheese and top with pepper. Broil until bubbly.
