Recipe: Broccoli Bites
Servings: 20 • Serving size: 1 Broccoli Bite
• 3 crowns of broccoli florets
• 2 cloves garlic
• 1 cup grated cheese (Mexican
blend, white cheddar, cheddar
(mild or sharp), etc.)
• 2 tbsp parmesan cheese
• ½ cup breadcrumbs
• ½ tbsp olive oil
• 3 eggs
• Ground black pepper to taste
1. Cut up the broccoli into large chunks and steam for 2-3 minutes.
(Can be done in the microwave- put some water into the bottom of
a microwaveable bowl, place the broccoli in the bowl of water and cook
on high for 3-4 minutes.)
2. Preheat oven to 400 degrees F. Line baking sheet with parchment
paper and spray or rub a little olive oil on top of the parchment paper.
3. In a food processor, process the garlic and pepper. Add the cooled
broccoli and pulse until it looks like rice - not pureed, but small enough
to roll into balls.
4. In a large mixing bowl, whisk the eggs. Add the broccoli bits, grated
cheese, parmesan cheese and breadcrumbs and stir to combine.
It should loosely stick together.
5. Roll mixture into balls (approx. 1-2 tbsp. per ball). Place the broccoli
balls on a lined baking sheet and bake for 10-12 minutes. Should be
slightly tender when done.
