Recipe: Black Bean Avocado Brownies
Servings: 12 brownies
Ingredients:
- 1 (15oz) can No Salt Added Black Beans, rinsed and drained
- 1 egg
- 2 egg whites
- ½ large ripe avocado
- 1 tsp avocado oil
- 2/3 cup unsweetened cocoa powder
- ¼ tsp baking powder
- ¼ tsp baking soda
- 2 tsp vanilla extract
- 2/3 cup brown sugar
- 1/3 cup chocolate chips, plus 2 tbsp. for topping
1. Preheat oven to 350 degrees F. Spray a 8x8 inch baking pan.
2. Place all ingredients besides chocolate chip into blender or food processor. Process or puree until ingredients form a smooth batter. If the batter is too thick and won't process then add in a tsp or two of water. The batter will be thick in order to produce fudgy brownies.
3. Add in 1/3 cup chocolate chips and fold into batter.
4. Pour batter into prepared pan, sprinkle with 2 tbsp. of remaining chocolate chip. Bake for 25-35 minutes or until knife inserted in center comes out clean.
5. Cool plan completely on wire rack, then cut into 12 squares.
