Recipe: Apricot Dip
Servings: 8 (1/4 cup each)
1 cup fresh orange juice
½ cup finely chopped dried apricots (3-4 ounces)
½ cup unsweetened applesauce
¼ tsp ground cinnamon
2 dashes ground nutmeg
8 ounces fat-free vanilla yogurt
In a small nonreactive saucepan, stir together the orange juice and apricots. Bring to a boil of medium-high heat. Reduce the heat and bring to a simmer, stirring frequently. As the apricots become tender, mash them with the back of a spoon. Simmer for about 20 minutes, or until all the liquids are absorbed.
Transfer to a medium bowl.
Stir in the applesauce, cinnamon, and nutmeg. Cover and let cool.
Stir the yogurt into cooled mixture. Cover and refrigerate for at least 1 hour.
